Blueberry Muffins

Preheat oven to 400F

Bake for 18 – 20 minutes

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 cup yogurt
  • 1/2 cup canola oil
  • 2 teaspoon vanilla extract
  • 2 1/3 cups blueberries-fresh or frozen(thawed)

Put the blueberries in a seperate bowl before adding to the batter. Cover the blueberries in flour then add to the mix.

Streusel Topping:

  • 1 cup all-purpose flour
  • 2/3 cup granulated sugar
  • 1 stick salted butter-melted
  • 1 teaspoon cinnamon

Stire the streusel until it has a crumble texture then add to the muffins half way through baking (10 minutes)
